These Blue Fin Tuna are caught under the Australia (and Global) Blue Fin Tuna fishing Licence (specific fish are numbered and only allowed under strict quota's set each year).

Prized by chefs around the world for displaying exceptional colour and fat qualities – being high in O-toro and Chu-toro fatty meat (pale colour) and Akami (rich red colour).
